Juicy Roasted Turkey Breast

1 turkey breast with bone or turkey breast without bone
1 medium onion
2 whole carrots
2 stalks of celery, halved
Olive oil
1 tablespoon ground lemon
Black pepper to taste
1 and 1/2 teaspoons onion powder
1 and 1/2 teaspoons garlic powder
1/4 teaspoon salt
1/2 teaspoon paprika


Place the onion, carrots, and celery in the bottom of a roasting pan. Put the turkey breast on top of the vegetables and brush with olive oil. Combine spices in a small bowl. Rub the spices over turkey. Roast at 400 degrees for 5 minutes and then turn the oven down to 325 degrees. Roast until the turkey breast reaches an internal temperature of 165 degrees.

Place the turkey on a serving platter and let it stand for 15 minutes before carving. Prepare gravy by adding water to the pan with the vegetables. Allow everything to simmer for 10 minutes. Remove the juice and thicken with flour or cornstarch.

Whole Grain Apple Cranberry Stuffing


2 cups low-sodium chicken broth, hot
1 cup dried cranberries
1 cup chopped celery
1 onion, chopped
2 tablespoons unsalted butter
2 Granny Smith apples, cored and finely chopped
6 cups day-old whole grain baguette, cut into 1/2-inch cubes
3 large eggs, scrambled
1/2 teaspoon poultry seasoning
1/4 teaspoon ground black pepper
1/8 teaspoon ground cinnamon
1 dried sage leaf, chopped



Preheat the oven to 350 degrees F. Spray an 11-inch oval baking dish with nonstick cooking spray. Combine the broth and cranberries in a small bowl and let soak for 30 minutes. Saute the celery and onions in the butter in a large skillet until tender, 5 minutes. Add the apples and cook for 5 minutes, stirring frequently. Remove from the heat and transfer to a large bowl.
Place the baguette cubes into a largebowl. Pour the broth and cranberries over. Pour in the eggs, and then add the salt, poultry seasoning, pepper, cinnamon and sage and mix together.
Mix in the onion and celery mixture. Spoon the stuffing into the prepared dish and bake until the center is set, 35 to 40 minutes.

GO B-A-N-A-N-A-S!

EASY BANANA BREAD RECIPE
(makes one loaf)
4 bananas, mashed
1 1/2 cups flour  (try mixing half whole wheat or almond flour too!)
1/4 cup butter or nut butter
1/4 cup applesauce
3/4 cup sugar
2 eggs, beaten or 1 egg & 2 egg whites
1 teaspoon baking soda
1 teaspoon vanilla
Preheat oven to 350 degrees. In a mixing bowl, combine bananas, applesauce and softened butter. Add eggs, vanilla and mix. Add sugar and baking soda. Add flour and mix well. Pour mixture into a greased loaf pan and bake for an hour or until toothpick comes clean.

HEALTHIER CHOCOLATE CHIP COOKIE DOUGH DIP


INGREDIENTS
1 1/2 cups chickpeas or white beans (1 can, drained and rinsed very well)
1/8 tsp salt
1/8 tsp baking soda
2 tsp pure vanilla extract
1/4 cup nut butter of choice (If you use peanut butter, it will have a slight peanut butter cookie dough taste)
up to 1/4 cup milk of choice, only if needed
¾  cup brown sugar
1/3 cup chocolate chips
2 to 3 tbsp oats (Ground flax will also work)

Instructions
Add all ingredients (except for chocolate chips) to a good food processor, and process until very smooth. Then mix in the chocolate chips. If made correctly and blended long enough, this should have the exact texture of real cookie dough!
Sweetener Notes: You can get away with less sugar– some people will be perfectly fine with just 3 tbsp for the whole recipe!

This can be served with graham crackers (with no hydrogenated fat), but fresh fruit (especially green apple slices) also works or try it by the spoonful.

Healthy Apple Crisp


INGREDIENTS:

1/3 cup all-purpose flour (can do 1/2 whole wheat flour)

1/4 cup packed light brown sugar

1/3 cup regular oats

1/4 teaspoon ground pumpkin pie spice

1/4 cup chilled butter

3 tablespoons chopped walnuts

7 cups sliced peeled apples

2 TBSP maple syrup

1/2 teaspoon ground cinnamon


DIRECTIONS

1. Preheat oven to 375°.

2. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, sugar, oats, and 1/4 teaspoon pumpkin pie spice in a medium bowl; cut in butter with a pastry blender or 2 knives until mixture is crumbly. Stir in walnuts.

3. Combine apple and remaining ingredients in a large bowl; toss well. Spoon apple mixture into an 8-inch square baking dish or 1 1/2-quart casserole. Sprinkle with crumb mixture. Bake at 375° for 45 minutes or until golden brown. Serve warm.
